I made tasty Chicken Bacon Potato soup a few days ago and I thought I would share the recipe here.
Basically I sauteed about 4 strips of bacon in a stock pot; then removed the bacon. I added 1/2 stick of butter to the pot. Then I added in: 2 diced carrots, 1 medium diced otato, 1 small diced onion, 2 stalks diced celery. I cooked all of that until it was soft. About 10 minutes. Then I added 1/2 cup flour and cooked until it was just browned. Then I tossed in 1/2 cup white wine. I stirred the pot really well to help dissolve my roux.Then I added 5 cups of chicken broth, 1 cup diced chicken, the diced cooked bacon, a splash of dried thyme, and a dash of fresh ground black pepper. This simmered for about 20 minutes while I popped out to the barn to check on rabbits.
So, now you can make my chicken, bacon, and potato soup too. 🙂
