So I made some stuffed zucchini for dinner one night. It was quite tasty. The filling, if you want to make an attempt at it, was roasted tomato sauce, panko bread crumbs, and a bit of Asiago cheese on top. Not too difficult to make. I scooped out the centers, filled them, and baked them at 350 for about 45 minutes. Have at it. Stuffed zucchini is so easy.
