Well. With all of that zucchini coming in, I had to start thinking of zucchini recipes.
The first one is Zucchini, Bacon, and Onion.
2 small zucchini or 1 medium, sliced thin
2 slices bacon, diced
1/2 small onion, minced
salt and pepper to taste
Start by sauteeing the bacon in a frying pan until the bacon begins to crisp. Add the zucchini, onions, salt, and pepper. Cover the pan, leaving a small vent space. Cook until the zucchini begins to crisp and brown.
The second recipe is zucchini linguine.
2 thinly sliced young zucchini
1/2 onion finely diced
3 cloves garlic minced
3 tbsp. butter
3 slices bacon, diced
2 tbsp. lemon juice
Saute bacon with 1 tbsp butter until partially crisp. Add the onion, garlic, and zucchini. Cook until the zucchini starts to brown. Add the butter and lemon juice. Boil your favorite pasta, like linguine. Add sauce to pasta. Top with cheese.
