Vanilla Bean Sugar Cookies with Pomegranate Icing

So, I love this Tasty Kitchen recipe. I’m reposting it here with my minor alterations.

2 sticks Soft Unsalted Butter
1 cup Sugar
2 teaspoons Vanilla
1 whole Egg
3 cups Plain Flour
2 teaspoons Baking Powder
1 vanilla bean

Icing:
2 tbsp. pomegranate juice
2 cups powdered sugar

Cream butter and sugar on high speed until light and fluffy. Add vanilla and egg. Beat 2 minutes on high speed. Beat in vanilla beans. Mix flour and baking powder together, then add the flour mixture to the butter/sugar mixture a cup at a time, beating after each addition.

Divide dough into halves and form a ball with each half. Turn dough onto a floured surface. Roll each ball of dough into a 12″ diameter circle, about 1/8″ in thick. Dip cookie cutters in flour and cut out cookies. Place cookies on ungreased cookie sheets, leaving a couple of inches of space around each cookie. Bake at 400 degrees for 5-6 minutes, or until cookies are only slightly browned. Remove cookies from the oven and let them completely cool.

Mix the pomegranate icing, add more juice or powdered sugar as needed to thin or thicken the icing to desired liquidity. Dip the top of the cookie in the icing, allow excess to flow off before placing on wire rack to dry. May take several hours to dry.
