Let’s Talk Sauce


Hot out? Yes. Very hot out. Hot weather means it is time for cold pasta salads. Today I’m sharing one of my simplest and favorite with you.

What you need:
1-2 cloves of diced garlic
1 smallish zucchini, chopped into thin slices
1 medium colored sweet pepper, sliced in thin strips
1 smaller onion, sliced in medium strips
optional (yellow squash, tomatoes, your other favorite vegetables)
1/8 pound sliced pepperoni, cut into small pieces
1/8 pound sliced hard salami, cut into small pieces
Small cubes of feta cheese (amount to taste)
Good Greek Olives (amount to taste)
1/2 pound piccolini penne (tiny penne!!) pasta or pasta of choice
2 green onions, chopped for garnish/ pasta topper
1/4 cup olive oil
2 tbsp. white wine
1/2 lemon, juiced
2 tbsp. Italian seasoning (recipe here)
1/8 cup white wine vinegar
1/2 tbsp. salt

Saute the garlic, zucchini, colored sweet pepper, onion, and any other vegetables in 2-3 tbsp. of olive oil. While the vegetables are softening, cook the pasta. Whisk the olive oil, white wine, lemon juice, Italian seasoning, white wine vinegar, and salt together. Once the vegetables are soft and the pasta is cooked, drain the pasta. Run cold water over the pasta to speed cooling. Mix the pasta, vegetables, feta, cold meats, and olives together. Sprinkle on the chopped green onions and pour the dressing over the pasta. Mix well and enjoy the deliciousness.

This is a great pasta salad to use up summer vegetables and clean out the fridge. 🙂
