How about a recipe for the new and improved Chocolate Mint Moose cookies?
- 1/2 cup semi-soft butter
- 1 cup sugar
- 1 egg
- 2 tbsp. vegetable oil
- 1 tsp. vanilla (or two if you’re adventurous)
Mix all of the ingredients above together until smooth. Then add:
- 2 cups flour
- 1/4 tsp. nutmeg
- 3 tsp. cocoa powder (special dark if you’re feeling it)
Mix together until smooth, then add:
- 2 oz. chopped walnuts or pecans
- 5 oz. (3/4 cup) chopped Andes mint pieces
Mix well. Drop by teaspoonful onto ungreased or lightly greased cookie sheet. Bake for 15-20 minutes at 350 degrees F. (To get the cookies to come off of my spoon easier I oil it with a bit of olive or vegetable oil.)
Voila! Chocolate Mint Moose Cookies, the new and improved version.
